OLIO EXTRAVERGINE DI OLIVA

Olives of the Correggiolo, Moraiolo and Leccino varieties are hand picked from the tree at an early stage of ripeness. They are chosen with extreme care and taken immediately to the oil mill. During this phase, speed is of the utmost importance since once the olives have been plucked from the tree their acidity begins to increase, their aroma diminishes and the oil can acquire a bitter taste.
At the mill the olives are cold-ground between stone wheels and then pressed. The oil is separated from the aqueous component by centrifuge. “GAVIOLI” Extra Virgin olive oil is tasty and appetising, lending itself perfectly to a wide range of cooking styles, fromthe simple “bread and oli” to the most elaborate preparation.
